Recipe~ Apple Crumble

Recently we went apple picking. The result is that we now have kilos and kilos of apples to use. Yay! That means I get to cook with them. Here is my recipe for a "deconstructed" apple crumble.

Ingredients                                                    

10 apples, cored and sliced                         1 cup rolled oats
A little water                                                1/2 cup dessicated coconut
1/2 cup brown sugar                                    1/4 cup sugar
1/2 cup white sugar                                      2 tbsp soft butter
1 tbsp cinnamon                                           1 tsp mixed spice
Lemon juice                                                  Lemon rind


Simmer apples in water with sugar, cinnamon and lemon juice until soft and mushy. Puree using a stick blender. Set aside. To make the crumble, mix together the oats, coconut, sugar, butter, spice and zest. Spread crumble in a roasting pan and grill at 200 degrees Celsius fan-forced until golden and crisp.
To serve, spoon apple puree into bowls. Sprinkle with crumble and top with freshly whipped cream or vanilla or caramel ice cream. Serve.
